What Is Vinegar?

Vinegar is a naturally acidic liquid produced when sugars are transformed through two stages of fermentation.

First, naturally occurring or added yeasts convert sugars into alcohol.

How Vinegar Is Made

Stage One — Sugar Becomes Alcohol

What Does “5% Acidity” Mean?

A vinegar labelled 5% acidity contains approximately 5 grams of acetic acid in every 100 mL of vinegar.

The remaining liquid is mostly water together with naturally occurring flavour compounds inherited from the original ingredient.

Higher percentages contain more acetic acid, resulting in a sharper taste and stronger acidity.

Double Strength Vinegar

While most household vinegars contain around 4–5% acidity, double strength vinegar commonly contains around 8% acidity (this can vary between manufacturers).

Because it forms naturally, every mother looks slightly different.

No two are exactly alike.

Why Is It Called “The Mother”?

Whether you see the mother depends on how the vinegar was processed after fermentation.

Raw, Unfiltered Vinegar: The mother is left in the bottle. Small natural particles remain suspended, giving the vinegar a cloudy appearance.

Filtered Vinegar: The vinegar passes through filters that remove the mother and other natural particles. The result is a bright, clear vinegar.

Pasteurised Vinegar: Some vinegars are gently heated after fermentation so they no longer contains a visible mother.

Does the Mother Mean Better Quality?

The presence of the mother simply tells you that the vinegar has not been filtered to remove it.

Many people enjoy raw apple cider vinegar with the mother in salad dressings and traditional wellness drinks.

Clear filtered white vinegar is often preferred for pickling and household cleaning because it has a neutral flavour and leaves no visible sediment.

Neither is universally “better”—they simply serve different purposes.

Can You Eat the Mother?

Yes. The mother is edible.

Some people gently shake the bottle before use to distribute it throughout the vinegar, while others prefer to let it settle naturally.

Both are perfectly acceptable.

Can the Mother Continue to Grow?

Yes. If raw vinegar is stored for long periods, especially after the bottle has been opened, a new mother may continue forming.

This is completely natural.

You may notice:

  • More cloudy strands
  • Additional sediment
  • A thicker floating layer

These changes simply reflect ongoing natural fermentation processes.
